Description

Delightful and easy-to-make Instant Pot Pancake Bites that are fluffy and perfect for a quick breakfast or snack. Made with your favorite pancake mix and topped with fresh fruit, these bite-sized pancakes are cooked pressure-style in the Instant Pot for a moist texture and fuss-free preparation.


Ingredients

Dry Ingredients

  • 1 cup Kodiak Pancake mix (or any other brand you prefer)

Wet Ingredients

  • ¾ cup milk (or water)

Toppings

  • ½ cup fresh fruit or topping of your choice (whole blueberries, chopped strawberries, mashed raspberries)

Other

  • Cooking spray (baking spray for silicone mold)


Instructions

  1. Mix Batter: Combine the pancake mix and milk (or water) in a bowl, stirring until the mixture is well combined and smooth, ensuring no lumps remain.
  2. Prepare Mold: Lightly spray the silicone mold with cooking spray to prevent sticking and help with easy removal after cooking.
  3. Fill Mold: Pour the batter into each mold cavity about ¾ full, which is approximately 2 tablespoons per cavity, leaving room for expansion.
  4. Add Toppings: Place your choice of fresh fruit or other toppings on top of the batter in each mold cavity.
  5. Setup Instant Pot: Place the trivet at the bottom of the Instant Pot to keep the mold elevated above the water.
  6. Add Water: Pour 1 cup of water into the Instant Pot to create the necessary steam for pressure cooking.
  7. Place Mold: Set the filled silicone mold on top of the trivet inside the Instant Pot.
  8. Seal and Cook: Secure the lid on the Instant Pot and turn the pressure valve to sealing. Set the pressure cook/manual function for 7 minutes. The pot will take some time to reach pressure before starting the countdown.
  9. Pressure Release: When cooking finishes, allow the pressure to naturally release for 5 minutes, then perform a quick release to release any remaining pressure.
  10. Remove Mold: Carefully lift the mold out of the pot using oven mitts to avoid burns, and let it cool for a few minutes to set.
  11. Serve: Flip the pancake bites onto a plate and enjoy your warm, fluffy Instant Pot pancake bites immediately.

Notes

  • You can customize toppings with your favorite fresh fruits, chocolate chips, or nuts.
  • If you don’t have milk, water is an easy substitute though milk adds richness.
  • Ensure to spray the silicone mold thoroughly to avoid sticking and breakage of pancake bites when removing.
