- 1 cup Kodiak Pancake mix (or any other brand you prefer)

- ¾ cup milk (or water)

- ½ cup fresh fruit or topping of your choice (whole blueberries, chopped strawberries, mashed raspberries)

Instructions
- Mix Batter: Combine the pancake mix and milk (or water) in a bowl, stirring until the mixture is well combined and smooth, ensuring no lumps remain.
- Prepare Mold: Lightly spray the silicone mold with cooking spray to prevent sticking and help with easy removal after cooking.
- Fill Mold: Pour the batter into each mold cavity about ¾ full, which is approximately 2 tablespoons per cavity, leaving room for expansion.
- Add Toppings: Place your choice of fresh fruit or other toppings on top of the batter in each mold cavity.
- Setup Instant Pot: Place the trivet at the bottom of the Instant Pot to keep the mold elevated above the water.
- Add Water: Pour 1 cup of water into the Instant Pot to create the necessary steam for pressure cooking.
- Place Mold: Set the filled silicone mold on top of the trivet inside the Instant Pot.
- Seal and Cook: Secure the lid on the Instant Pot and turn the pressure valve to sealing. Set the pressure cook/manual function for 7 minutes. The pot will take some time to reach pressure before starting the countdown.
- Pressure Release: When cooking finishes, allow the pressure to naturally release for 5 minutes, then perform a quick release to release any remaining pressure.
- Remove Mold: Carefully lift the mold out of the pot using oven mitts to avoid burns, and let it cool for a few minutes to set.
- Serve: Flip the pancake bites onto a plate and enjoy your warm, fluffy Instant Pot pancake bites immediately.

- You can customize toppings with your favorite fresh fruits, chocolate chips, or nuts.
- If you don’t have milk, water is an easy substitute though milk adds richness.
