Ingredients

Mousse Base

  • 8 oz. bittersweet chocolate baking bar (60% cacao)
  • 2/3 cup Irish Cream liqueur (like Bailey’s), room temperature or lukewarm
  • 1 tsp espresso powder
  • Pinch kosher salt
  • 1/2 tsp vanilla extract (optional)

Whipped Cream

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar


Instructions

  1. Chill Equipment: Place a mixing bowl and the beaters of a hand mixer in the freezer for 10-15 minutes to ensure the best whipping results.
  2. Make Whipped Cream: Remove chilled bowl and beaters. Add 2 cups heavy whipping cream and 1/4 cup powdered sugar to the bowl and beat with a hand mixer for 6-8 minutes until medium-firm peaks form. Place whipped cream in the refrigerator until needed.
  3. Melt Chocolate: Prepare a double boiler by filling a small to medium saucepan with about an inch of water and bring to a low simmer. Place a heat-proof bowl on top, ensuring it does not touch the water. Add the chocolate pieces and stir frequently until smooth, shiny, and fully melted.
  4. Combine Irish Cream and Flavorings: Slowly pour the room temperature or slightly warmed Irish Cream into the melted chocolate. Add espresso powder, a pinch of kosher salt, and vanilla extract if using. Stir gently until the mixture is smooth and homogenized.
  5. Fold in Whipped Cream: Retrieve the whipped cream and fold approximately 3 cups of it into the melted chocolate mixture carefully, using 15-20 gentle folds until fully incorporated. Reserve about 1 cup of whipped cream for topping and refrigerate it.
  6. Chill the Mousse: Spoon or pipe the mousse into serving containers. Cover and refrigerate for at least 4-6 hours, or preferably overnight, to allow the mousse to set perfectly.
  7. Serve: Top each serving with the reserved whipped cream and garnish with chocolate shavings or fresh fruit as desired before serving.
