- 8 slices of bacon
- 8 oz cream cheese, softened
- 1 cup sour cream
- 2 green onions, minced
- 1 garlic clove, minced
- 4 oz canned green chiles
- 1.5 cup cheddar cheese, shredded
- 1.5 cup Monterey Jack cheese, shredded
- salt & pepper, to taste
Topping Ingredients
- 1/2 cup Panko bread crumbs
- 2 tbsp salted butter, melted
- 1/4 cup Parmesan cheese, shredded
- 1 tbsp fresh parsley, minced
Instructions
- Cook the Bacon: Preheat your oven to 400°F (200°C). Lay the bacon slices on a baking sheet fitted with a rack and bake for 15–20 minutes until crispy. Alternatively, you may cook bacon on the stovetop or in an air fryer. Once cooked, drain the bacon on paper towels and roughly chop it. Set aside.
- Prepare the Dip Mixture: While the bacon cooks, take a large mixing bowl and combine the softened cream cheese, sour cream, minced garlic, green onions, canned green chiles, shredded cheddar, and Monterey Jack cheeses. Season with salt and pepper to taste. Stir everything well until fully combined, then fold in the chopped bacon gently.
- Assemble the Dip: Transfer the creamy mixture into an even layer in a baking dish suitable for oven use.
- Make the Topping: In a small bowl, mix the panko bread crumbs with melted butter, then stir in the shredded Parmesan cheese and minced fresh parsley. Evenly sprinkle this topping mixture over the dip in the baking dish.
- Bake the Dip: Place the baking dish in the preheated oven at 375°F (190°C) and bake for about 20 minutes until the dip is bubbly and the top is a golden brown crust.
