Description

This Keto Chicken Broccoli Casserole is a creamy, cheesy dish perfect for low-carb and keto diets. Featuring tender chicken and bright broccoli in a rich garlic cream sauce, topped with melted mozzarella and parmesan cheeses, it’s a quick and satisfying meal made entirely on the stovetop and finished under the broiler for a golden, bubbly crust.


Ingredients

Vegetables & Aromatics

  • 16 ounces broccoli, coarsely chopped
  • 4 cloves garlic, minced

Dairy

  • 2 tbsp butter, divided
  • 3/4 cup heavy whipping cream
  • 1 1/3 cups shredded mozzarella, divided
  • 1/3 cup grated parmesan cheese

Protein

  • 1 1/2 lb cooked, chopped chicken (about 4 cups)

Seasonings

  • Salt and pepper, to taste


Instructions

  1. Sauté Broccoli: Set a 10-inch ovenproof skillet over medium heat and add 1 tablespoon of butter. Once melted, add the coarsely chopped broccoli and sauté until bright green and just tender, about 4 minutes. Remove the broccoli to a bowl and set aside.
  2. Cook Garlic & Cream: Melt the remaining tablespoon of butter in the same pan, then add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy whipping cream and bring it to a simmer. Let it cook until the cream thickens and reduces slightly, about 3 to 5 minutes.
  3. Melt Cheeses: Stir in 1/3 cup of the shredded mozzarella and all of the grated parmesan cheese into the cream sauce until fully melted and combined. Season the sauce with salt and pepper to your taste.
  4. Combine Ingredients: Add the sautéed broccoli and the chopped cooked chicken to the skillet with the cheese sauce. Stir until everything is well coated. Then, evenly top the mixture with the remaining 1 cup of shredded mozzarella cheese.
  5. Broil: Preheat your broiler and position the skillet about 6 inches from the heat source. Broil until the cheese topping is golden brown and bubbling, about 2 to 5 minutes – watch carefully to avoid burning.
