Ingredients

Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • Zest of 3 key limes (or 1 regular lime)
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Key Lime Mousse

  • 1/2 cup raw cashews, soaked in hot water for 1 hour then drained
  • 6 tbsp coconut milk (full-fat from a can)
  • 2 tbsp maple syrup
  • 1/4 cup key lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder (optional, for color)


Instructions

  1. Prepare the chia mixture: In a bowl, mix the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract. Whisk thoroughly for about 30 seconds until well combined.
  2. Refrigerate the chia pudding: Cover the bowl and place it in the fridge to let the chia seeds absorb the liquid and firm up. This should take at least 2 hours or can be left overnight for best results.
  3. Make the key lime mousse: Add the soaked and drained cashews, full-fat coconut milk, maple syrup, key lime juice, key lime zest, and optional matcha powder into a blender or food processor. Blend on high until the mixture is completely smooth and creamy, stopping to scrape down the sides as needed to ensure an even consistency.
  4. Assemble the pudding: Spoon the chilled chia pudding evenly into 4 small jars or serving glasses. Then, carefully pour the smooth key lime mousse over the chia pudding layer.
  5. Final set: Place the assembled jars back into the refrigerator and let them set for an additional 2 hours before serving to allow the mousse layer to firm up.
