Description

A light and creamy Lemon Cheesecake Mousse that combines tangy lemon Jello with smooth cream cheese and whipped topping for a refreshing, easy-to-make dessert. Ready in just over two hours and perfect for garnish with fresh berries.

Ingredients

For the Mousse

  • 1 package lemon Jello (4 serving size)
  • ½ cup boiling water
  • 1 package cream cheese (8 oz / 250 g, softened)
  • ½ cup cold water
  • 1 cup Cool Whip

For Garnish

  • Fresh berries (such as blueberries, raspberries, or strawberries)

Instructions

  1. Dissolve the Jello: Add the lemon Jello powder to a bowl and pour in ½ cup of boiling water. Stir continuously until the Jello is completely dissolved and no granules remain.
  2. Blend the mixture: Pour the dissolved Jello into a blender. Add the softened cream cheese and ½ cup of cold water. Blend on high for 1 minute or until the mixture becomes completely smooth and creamy.
  3. Combine with Cool Whip: Transfer the blended mixture into a large bowl. Gently fold in the Cool Whip until the mixture is well blended and smooth, ensuring a light and airy texture.
  4. Chill the mousse: Spoon the mousse evenly into four to six dessert dishes depending on your preferred serving size. Cover and place them in the refrigerator to chill for 2 hours, allowing the mousse to set properly.
  5. Serve with garnish: When ready to serve, top each mousse with fresh berries or an additional dollop of Cool Whip for extra flavor and decoration.

Notes

  • Use softened cream cheese for easier blending and smoother texture.
  • Ensure the lemon Jello is completely dissolved to avoid graininess.
  • Adjust the number of dessert dishes depending on your preferred portion size.
  • Chilling time is essential to allow the mousse to set properly.
  • Fresh berries of your choice can be added for a burst of color and flavor.
