Ingredients

Lemon Oreo Crust

  • 36 Lemon Oreo cookies
  • ⅓ cup unsalted butter, melted (can substitute salted butter)

Lemon Pudding Filling

  • 2 (3.5 ounce) boxes instant lemon pudding mix
  • 3 ¼ cups cold whole milk

Lemon Cream Layer

  • 16 ounces (2 blocks) cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • ⅓ cup fresh squeezed lemon juice
  • Zest of 1 lemon (optional)
  • 2 (8 ounce) tubs Cool Whip whipped topping, thawed (divided use)


Instructions

  1. Prepare the Lemon Oreo Crust: Spray a 9×13-inch baking dish with nonstick spray. Place 36 Lemon Oreo cookies in a food processor and process into fine crumbs, reserving ¾ cup of crumbs to garnish later. In a small bowl, mix the remaining crumbs with ⅓ cup melted unsalted butter until evenly moistened. Press the crumb mixture firmly into the bottom of the baking dish. Place the crust in the freezer to set while preparing the next layer.
  2. Make the Lemon Pudding Filling: In a medium bowl, whisk together 2 boxes of instant lemon pudding mix with 3 ¼ cups cold whole milk until fully combined. Cover and refrigerate to chill while you prepare the cream layer.
  3. Prepare the Lemon Cream Layer: In a mixing bowl, beat 16 ounces softened cream cheese with an electric mixer until smooth and creamy. Add 1 cup powdered sugar, ⅓ cup fresh lemon juice, and lemon zest (if using), mixing well until smooth. Fold in one tub of thawed Cool Whip gently to maintain the airy texture. Spread this cream mixture evenly over the chilled Oreo crust.
  4. Assemble the Dessert: Evenly spread the chilled lemon pudding over the cream cheese layer. Then, spread the remaining tub of Cool Whip on top of the pudding layer.
  5. Garnish and Chill: Sprinkle the reserved ¾ cup crushed Lemon Oreo crumbs evenly over the top of the dessert. Refrigerate for at least 3 hours to allow the layers to set properly. For faster chilling, place the dish in the freezer for the first hour.
