Description
This refreshing Lemon Jello recipe combines the tartness of fresh lemon juice with a smooth gelatin base, sweetened to your liking. It’s a simple, no-bake dessert that requires just a few ingredients and a short amount of active prep time, followed by chilling until perfectly set.
Ingredients
Gelatin Mixture
- 1 1/2 cups water (divided: ½ cup cold, 1 cup boiling)
- 2 envelopes unflavored gelatin (or 1 envelope as an alternative)
Lemon Mixture
- ½ cup fresh lemon juice
- Sugar or honey, to taste
Instructions
- Hydrate the gelatin: Sprinkle the unflavored gelatin over ½ cup of cold water and let it sit undisturbed for about 5 minutes until it blooms and absorbs the water.
- Dissolve the gelatin: Bring 1 cup of water to a boil, then pour it over the bloomed gelatin. Stir continuously until the gelatin is completely dissolved, creating a smooth mixture.
- Add lemon juice and sweetener: Stir in ½ cup of fresh lemon juice. Add sugar, honey, or your preferred sweetener gradually, stirring until it fully dissolves and reaches your desired sweetness.
- Refrigerate to set: Pour the mixture into a single dish for slicing or into 4 individual cups for serving. Place in the refrigerator and chill for about 3 hours, or until the gelatin is fully set and firm.
Notes
- You can use 1 envelope of unflavored gelatin if you prefer a softer texture, but 2 envelopes result in a firmer set.
- Adjust sweetness based on your taste preference; start with 2-3 tablespoons of sugar or honey and add more if needed.
- Make sure the gelatin is fully dissolved before adding lemon juice to avoid clumps.
- This recipe is easily doubled or halved depending on serving needs.
- For a slightly different flavor, consider adding a teaspoon of lemon zest.
