Ingredients

Gelatin Mixture

  • 1 1/2 cups water (divided: ½ cup cold, 1 cup boiling)

Lemon Mixture

  • ½ cup fresh lemon juice
  • Sugar or honey, to taste


Instructions

  1. Hydrate the gelatin: Sprinkle the unflavored gelatin over ½ cup of cold water and let it sit undisturbed for about 5 minutes until it blooms and absorbs the water.
  2. Dissolve the gelatin: Bring 1 cup of water to a boil, then pour it over the bloomed gelatin. Stir continuously until the gelatin is completely dissolved, creating a smooth mixture.
  3. Add lemon juice and sweetener: Stir in ½ cup of fresh lemon juice. Add sugar, honey, or your preferred sweetener gradually, stirring until it fully dissolves and reaches your desired sweetness.
  4. Refrigerate to set: Pour the mixture into a single dish for slicing or into 4 individual cups for serving. Place in the refrigerator and chill for about 3 hours, or until the gelatin is fully set and firm.

Notes

  • You can use 1 envelope of unflavored gelatin if you prefer a softer texture, but 2 envelopes result in a firmer set.
  • Adjust sweetness based on your taste preference; start with 2-3 tablespoons of sugar or honey and add more if needed.
