Ingredients

Pizza Base

  • 1 ball pizza dough
  • Kosher salt, to taste
  • Olive oil, for drizzling and tossing

Toppings

  • 1/4 cup basil pesto
  • 8 ounces grated low moisture mozzarella cheese
  • 1/2 small Meyer lemon, halved, thinly sliced, seeds removed (regular lemon can be used)
  • 4 ounces goat cheese, crumbled
  • 2 cups chopped broccoli florets
  • Crushed red pepper flakes, to taste
  • Fresh chopped basil, for topping


Instructions

  1. Preheat Oven: Preheat your oven to 500°F (260°C) and place an oven rack in the lowest possible position. Lightly coat a pizza pan with nonstick cooking spray to prevent sticking.
  2. Prepare Dough: Stretch the pizza dough into a round shape large enough to fit your pizza pan. Drizzle the dough lightly with olive oil and use your hands to spread it evenly. Sprinkle a small pinch of kosher salt over the dough for seasoning.
  3. Add Base Toppings: Evenly spread the basil pesto over the dough, then sprinkle the grated mozzarella cheese across the surface. Scatter the thin lemon slices and crumbled goat cheese evenly over the cheese layer.
  4. Prepare and Add Broccoli: Toss the chopped broccoli florets with 1 tablespoon of olive oil to coat them well. Then distribute the broccoli evenly over the pizza. Finish topping by sprinkling kosher salt and crushed red pepper flakes as desired for extra flavor and a mild kick.
  5. Bake the Pizza: Place the pizza pan on the lowest oven rack and bake for 9 to 11 minutes, or until the crust is golden brown and crisp on the bottom and edges, and the cheeses are melted and bubbly.
