Description

Lunchbox Pizza Muffins are a delightful twist on classic pizza, perfect for quick lunches or snacks. These mini pizza cups feature a golden, crispy dough base filled with savory pizza sauce, melted mozzarella cheese, and sliced black olives. Easy to make and portable, they are an ideal treat for kids and adults alike.

Ingredients

Pizza Dough

  • 1 ball ready-made pizza dough (about 1 lb / 450 g)

Filling & Toppings

  • ¾ cup thick pizza sauce
  • 1½ cups shredded mozzarella cheese
  • ¼ cup sliced black olives
  • Fresh basil or parsley (optional, for garnish)

Other

  • Olive oil (for greasing muffin tin)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C) to ensure it reaches the perfect temperature for baking the pizza muffins.
  2. Grease Muffin Tin: Generously grease a standard 12-cup muffin tin with olive oil, making sure to coat the sides to prevent sticking and help create a crispy crust.
  3. Divide Dough: Divide the pizza dough into 12 equal portions for uniform mini pizza muffins.
  4. Shape Dough Cups: Flatten each dough piece into a disc about 3–4 inches wide and press it into each muffin cup, pushing the dough up the sides to form little pizza cups that will hold the toppings.
  5. Add Sauce: Spoon about 1 tablespoon of thick pizza sauce into each dough cup without overfilling to maintain the perfect balance between sauce and crust.
  6. Top with Cheese: Generously sprinkle shredded mozzarella cheese over the sauce in each cup to ensure delicious melty goodness.
  7. Add Olives: Distribute sliced black olives evenly on top of the cheese for added flavor and texture. If using fresh basil or parsley, save it for garnish after baking.
  8. Bake: Place the muffin tin in the oven and bake for 15–18 minutes until the cheese is bubbly and golden, and the dough edges are crisp and cooked through.
  9. Cool & Garnish: Let the pizza muffins cool in the pan for about 5 minutes to firm up before carefully removing them. Garnish with fresh basil or parsley if desired for a fresh, aromatic finish.

Notes

  • You can substitute black olives with other toppings like pepperoni, mushrooms, or bell peppers to customize your pizza muffins.
  • Using a thick pizza sauce helps prevent soggy bottoms and keeps the dough crisp.
  • Make sure to grease the muffin tin well to allow easy removal of the pizza muffins.
  • These pizza muffins are great served warm or at room temperature, making them convenient for lunchboxes or picnics.
