Description

Mini Egg Frittatas are delicious, protein-packed breakfast bites loaded with veggies and savory sausage. These easy-to-make frittatas bake in muffin tins to create perfectly portioned, grab-and-go meals that are fluffy and flavorful. Ideal for meal prep or a quick morning treat, they combine eggs, bell peppers, spinach, onions, and breakfast sausage seasoned with salt and pepper.


Ingredients

Egg Mixture

  • 6 large eggs
  • 6 large egg whites (or use 3 whole eggs instead)

Vegetables

  • 1 cup bell peppers, chopped
  • 1/2 cup onion, chopped
  • 1 cup spinach, chopped

Protein

  • 1 cup cooked crumbled breakfast sausage (or substitute with bacon or diced ham)

Seasoning

  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper


Instructions

  1. Prep. Preheat your oven to 350°F (175°C). Lightly spray a non-stick or silicone muffin tin with nonstick cooking spray to prevent sticking.
  2. Whisk egg mixture. In a large bowl, vigorously whisk together 6 large eggs and 6 large egg whites until well combined. Add the chopped bell peppers, onion, spinach, cooked crumbled breakfast sausage, kosher salt, and black pepper. Stir thoroughly to ensure all ingredients are evenly distributed.
  3. Add to muffin tin. Pour the egg mixture evenly into each muffin cup, filling each about 3/4 full or leaving approximately 1/4 inch from the top to allow room for puffing during baking.
  4. Bake. Place the muffin tin in the preheated oven and bake for 23 to 30 minutes. Check doneness by inserting a toothpick in the center; it should come out clean when fully cooked. Once done, carefully run a knife around the edges to loosen the frittatas and gently pop them out of the tin. Serve hot and enjoy.

Notes

  • You can substitute the breakfast sausage with cooked bacon or diced ham for variation.
  • Feel free to add other vegetables like mushrooms or tomatoes to customize your frittatas.
  • These frittatas can be stored in the refrigerator for up to 3 days and reheated in the microwave.
