Description

These Mini Strawberry Shortcake Bites are delightful, bite-sized desserts featuring fluffy angel food cake layered with glazed strawberries and cool whip. Ingredients

Angel Food Cake

  • Angel food cake, cut into 1/2″ tall squares or circles (approximately 1.25”-1.5” wide)

Strawberries

  • Fresh strawberries, green leafy tops sliced off
  • Strawberry glaze, enough to coat strawberries evenly

Toppings

  • Cool Whip, for dolloping
  • Food picks, for securing layers


Instructions

  1. Prepare Cake Bases: Cut the angel food cake into squares about 1/2 inch tall and 1.25 to 1.5 inches wide depending on strawberry size. For a more polished look, use a round cutter of the same dimensions to make circular cake pieces.
  2. Glaze Strawberries: In a bowl, toss the strawberries with the strawberry glaze until they are evenly coated. Then slice each strawberry in half so you have a leafy green half and a pointed tip half.
  3. Assemble Shortcake Bites: Place a piece of angel food cake on a serving platter. Add a dollop of Cool Whip on top, then layer the flat half of a glazed strawberry. Add another piece of cake on top followed by another dollop of Cool Whip and the pointed half of the strawberry. Secure the assembled bite with a food pick to hold the layers together.
