Description

This Mushroom Flatbread recipe combines crispy flatbread crusts topped with sautéed mushrooms, melted mozzarella, fresh basil, and Parmesan cheese for a quick and flavorful vegetarian meal or appetizer. Ready in just 20 minutes, it’s perfect for a light lunch or easy snack.

Ingredients

Flatbread Base

  • 2 lavash or other flatbread crusts
  • 1-2 teaspoons olive oil

Mushroom Topping

  • 1 Tablespoon butter
  • 2 cups sliced mushrooms
  • 1/4 teaspoon garlic powder
  • Pinch fine sea salt

Cheeses and Garnish

  • 1 and 1/2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, slivered
  • 1/4 cup grated Parmesan cheese
  • Red pepper flakes (optional garnish)

Instructions

  1. Preheat Oven and Prepare Flatbreads: Preheat your oven to 425°F (220°C) and place the flatbreads on a large rimmed baking sheet, ready for topping.
  2. Sauté Mushrooms: Melt butter in a small skillet over medium heat. Add sliced mushrooms, garlic powder, and sea salt. Cook for 4-5 minutes, stirring occasionally, until mushrooms turn dark brown and most moisture has evaporated.
  3. Prepare Flatbreads for Topping: While mushrooms cook, lightly brush olive oil along the outer rims of each flatbread. Then sprinkle shredded mozzarella cheese evenly over each flatbread.
  4. Top with Mushrooms and Herbs: Scatter the hot sautéed mushrooms evenly over the mozzarella. Arrange carefully to avoid disturbing the cheese. Then sprinkle grated Parmesan cheese and slivered fresh basil on top.
  5. Bake the Flatbreads: Place the baking sheet in the oven and bake for 9-12 minutes until the cheese is melted, bubbling in spots, and the flatbread edges are browned and crisp.
  6. Finish and Serve: Remove from the oven and garnish with additional fresh basil and optional red pepper flakes. Slice into portions and enjoy immediately.

Notes

  • Use lavash or any thin flatbread as a base for easy crisping in the oven.
  • For extra flavor, try using a mix of different mushrooms like cremini or shiitake.
  • Red pepper flakes add a nice spicy kick but are optional.
  • To make this recipe vegan, substitute butter with plant-based margarine and use vegan cheese alternatives.
  • Make sure to arrange the mushrooms carefully on top to avoid displacing the cheese too much during assembly.
