Ingredients
Flatbread Base
- 2 lavash or other flatbread crusts
- 1-2 teaspoons olive oil
Mushroom Topping
- 1 Tablespoon butter
- 2 cups sliced mushrooms
- 1/4 teaspoon garlic powder
- Pinch fine sea salt
Cheeses and Garnish
- 1 and 1/2 cups shredded mozzarella cheese
- 1/4 cup fresh basil leaves, slivered
- 1/4 cup grated Parmesan cheese
- Red pepper flakes (optional garnish)
Instructions
- Preheat Oven and Prepare Flatbreads: Preheat your oven to 425°F (220°C) and place the flatbreads on a large rimmed baking sheet, ready for topping.
- Sauté Mushrooms: Melt butter in a small skillet over medium heat. Add sliced mushrooms, garlic powder, and sea salt. Cook for 4-5 minutes, stirring occasionally, until mushrooms turn dark brown and most moisture has evaporated.
- Prepare Flatbreads for Topping: While mushrooms cook, lightly brush olive oil along the outer rims of each flatbread. Then sprinkle shredded mozzarella cheese evenly over each flatbread.
- Top with Mushrooms and Herbs: Scatter the hot sautéed mushrooms evenly over the mozzarella. Arrange carefully to avoid disturbing the cheese. Then sprinkle grated Parmesan cheese and slivered fresh basil on top.
- Bake the Flatbreads: Place the baking sheet in the oven and bake for 9-12 minutes until the cheese is melted, bubbling in spots, and the flatbread edges are browned and crisp.
- Finish and Serve: Remove from the oven and garnish with additional fresh basil and optional red pepper flakes. Slice into portions and enjoy immediately.
Notes
- Use lavash or any thin flatbread as a base for easy crisping in the oven.
- For extra flavor, try using a mix of different mushrooms like cremini or shiitake.
- Red pepper flakes add a nice spicy kick but are optional.
- To make this recipe vegan, substitute butter with plant-based margarine and use vegan cheese alternatives.
- Make sure to arrange the mushrooms carefully on top to avoid displacing the cheese too much during assembly.
