Ingredients

For the Caramelized Onions

  • 1 tablespoon olive oil
  • 8 ounces crimini mushrooms, sliced
  • 4 thick slices Swiss cheese

Instructions

  1. Saute onions: Melt butter in a large cast-iron frying pan over medium-high heat. Add the sliced onions and stir. Cook for 8-10 minutes, stirring occasionally, until onions soften.
  2. Caramelize onions: Reduce heat to medium, add ¼ teaspoon salt, and cook the onions slowly for 30-50 minutes, stirring occasionally. Add a splash of water if onions or fond brown too quickly to prevent burning, cooking until onions reach desired caramelization.
  3. Prep ingredients: While onions cook, slice the mushrooms and shape the ground beef into four even patties.
  4. Cook mushrooms: When onions are golden, remove them from the pan. Increase heat to medium, add olive oil and mushrooms. Cook, stirring occasionally for about 10 minutes until mushrooms soften and start to brown. Season with ¼ teaspoon salt and pepper to taste, then remove mushrooms from pan.
  5. Cook burger patties: Increase heat to medium-high. Place patties in pan and season with remaining ½ teaspoon salt. Cook for 3-4 minutes until a crust forms on the bottom. Flip patties and cook 3-4 more minutes until internal temperature reaches 165°F. Add Swiss cheese slices over patties during last 2 minutes to melt.
  6. Toast buns: Wipe pan clean with paper towel. Butter brioche buns and toast them in the pan in batches until golden.
  7. Assemble burgers: Spread mayonnaise on toasted buns, add butter lettuce, place cheesy burger patty on top, then layer with caramelized onions and sautéed mushrooms. Serve immediately for best flavor and texture.
