Ingredients
Cheesecake Base
- 2 cups cottage cheese
- 1 cup plain Greek yogurt (preferably Fage 0%)
- ¼ cup maple syrup
- 1 tablespoon vanilla bean paste

- 2 tablespoons cocoa powder

- ½ cup strawberries

- Reserved plain cheesecake mixture

Instructions
- Make the Cheesecake Base: Add cottage cheese, Greek yogurt, maple syrup, vanilla bean paste, and a pinch of salt to a blender. Blend thoroughly until the mixture becomes completely smooth and creamy.
- Make the Chocolate Layer: Divide the blended cheesecake mixture evenly into three portions, about 1 cup plus 2 tablespoons each. Stir 2 tablespoons of cocoa powder into the first portion until well combined and smooth.
- Make the Strawberry Layer: Place the second portion of cheesecake mixture back into the blender with ½ cup strawberries. Optionally add additional maple syrup if desired. Blend until the mixture is smooth and has a vibrant pink hue.
- Keep the Vanilla Layer Plain: Reserve the third portion of cheesecake mixture unaltered to serve as the vanilla layer.
- Assemble the Jars: In small jars or serving containers, layer the chocolate, vanilla, and strawberry mixtures in your preferred order. The classic presentation is chocolate on the bottom, vanilla in the middle, and strawberry on top to create a Neapolitan effect.
- Chill & Serve: Refrigerate the assembled jars for at least 1 to 2 hours to allow them to thicken and develop their creamy texture. Just before serving, optionally top with crushed graham crackers, fresh strawberries, chocolate shavings, or coconut whipped cream for added flavor and decoration.
