Ingredients
Base Layer
- ½ cup Almond Butter
- ¼ cup Coconut Oil (melted)
- 2 cups Almond Flour
- 2 tbsp Vanilla Extract
- ¼ cup Maple Syrup
Top Layer
- ¾ cup Raw Walnuts
- 10 Pitted Dates
- 2 tbsp Maple Syrup
- ¼ tsp Sea Salt
Instructions
- Prepare the Base Layer: In a large bowl, combine almond butter, melted coconut oil, maple syrup, vanilla extract, and almond flour. Mix thoroughly until you achieve a thick, consistent batter. Line a bread loaf pan with parchment paper and press this mixture firmly and evenly into the bottom of the pan, creating a thick layer as shown in the reference photos.
- Freeze the Base: Place the loaf pan with the base layer into the freezer for 10 minutes. This will help it firm up while you prepare the top layer.
- Prepare the Top Layer: In a food processor, combine the raw walnuts, pitted dates, 2 tablespoons of maple syrup, and sea salt. Blend until the mixture becomes thick and slightly sticky. You may need to stop and scrape down the sides with a spatula to ensure even blending.
- Assemble the Blondie Bars: Remove the base layer from the freezer. Gently press the walnut-date mixture evenly on top of the hardened base. This layer will be thinner, so work carefully to cover the entire base layer uniformly.
- Freeze to Set: Return the assembled bars to the freezer for a few minutes to set both layers firmly.
- Serve: Once firm, remove from the freezer, cut into bars, and enjoy your no bake blondie treats.
