Description

Delicious and nutritious No Bake Blondie Bars made with almond butter, almond flour, and natural sweeteners. These bars combine a creamy base with a crunchy walnut-date topping, perfect for a quick healthy snack or dessert without any baking involved.

Ingredients

Base Layer

  • ½ cup Almond Butter
  • ¼ cup Coconut Oil (melted)
  • 2 cups Almond Flour
  • 2 tbsp Vanilla Extract
  • ¼ cup Maple Syrup

Top Layer

  • ¾ cup Raw Walnuts
  • 10 Pitted Dates
  • 2 tbsp Maple Syrup
  • ¼ tsp Sea Salt

Instructions

  1. Prepare the Base Layer: In a large bowl, combine almond butter, melted coconut oil, maple syrup, vanilla extract, and almond flour. Mix thoroughly until you achieve a thick, consistent batter. Line a bread loaf pan with parchment paper and press this mixture firmly and evenly into the bottom of the pan, creating a thick layer as shown in the reference photos.
  2. Freeze the Base: Place the loaf pan with the base layer into the freezer for 10 minutes. This will help it firm up while you prepare the top layer.
  3. Prepare the Top Layer: In a food processor, combine the raw walnuts, pitted dates, 2 tablespoons of maple syrup, and sea salt. Blend until the mixture becomes thick and slightly sticky. You may need to stop and scrape down the sides with a spatula to ensure even blending.
  4. Assemble the Blondie Bars: Remove the base layer from the freezer. Gently press the walnut-date mixture evenly on top of the hardened base. This layer will be thinner, so work carefully to cover the entire base layer uniformly.
  5. Freeze to Set: Return the assembled bars to the freezer for a few minutes to set both layers firmly.
  6. Serve: Once firm, remove from the freezer, cut into bars, and enjoy your no bake blondie treats.

Notes

  • Use parchment paper in the loaf pan to prevent sticking and ease removal.
  • Ensure the dates are soft and pitted for easy blending; soak them if they are too dry.
  • You can substitute walnuts with pecans or other nuts if preferred.
  • Store bars in the refrigerator or freezer to keep them firm.
  • For a nut-free version, consider substituting almond butter and walnuts with seed butters and seeds.
