Ingredients

- 1 cup pecans (120g)
- 1 cup dates (Medjool or regular, chopped, 160g)
- 2 cups shredded carrots (220g)
- 1/2 teaspoon cinnamon (1.3g)
- 1/2 teaspoon nutmeg (1.1g)
- 1/4 teaspoon sea salt (1.4g)
- 1/2 cup shredded coconut flakes (40g, half for mixing)
- 1/4 cup raisins (40g)
Coating
- 1/2 cup shredded coconut flakes (40g, for rolling)
Instructions
- Prepare the mixture: Add the pecans, dates, shredded carrots, cinnamon, nutmeg, sea salt, raisins, and half of the shredded coconut flakes to your food processor. Pulse everything together until the mixture starts to form a dough-like consistency, about 1 minute. Scrape down the sides of the processor bowl as needed to ensure even blending.
- Shape into balls: Using a sheet of cling-film (Saran Wrap), scoop portions of the mixture and roll them into round balls by wrapping and rolling with the cling-film until all the mixture is used. Alternatively, dampen your hands and roll the mixture into balls manually if you prefer not to use cling-film.
- Roll in coconut: Roll each ball in the remaining shredded coconut flakes to coat the exterior evenly, adding a nice texture and flavor.
- Chill: Place the coated balls in the refrigerator for at least one hour. This chilling step helps the energy bites set firmly and enhances their flavor and texture.
- Serve: Once set, enjoy these nutritious and tasty no-bake carrot cake energy bites as a snack or quick energy boost.
