Instructions

  1. Prepare the crust: In a medium mixing bowl, stir together the graham cracker crumbs, granulated sugar, and melted butter. The mixture will be crumbly but should stick together when pressed between your fingers.
  2. Form the crust: Press the crumb mixture firmly into the bottom and up the sides of a pie plate. Place the crust in the refrigerator to chill while you prepare the filling.
  3. Make the cream cheese filling: In the bowl of a stand mixer, beat the softened cream cheese together with the powdered sugar until the mixture is smooth and creamy, about 2 minutes.
