Crust

- ½ cup heavy whipping cream
Topping
- 1 (15 oz) can cherry pie filling
Instructions
- Prepare the crust: In a medium mixing bowl, stir together the graham cracker crumbs, granulated sugar, and melted butter. The mixture will be crumbly but should stick together when pressed between your fingers.
- Form the crust: Press the crumb mixture firmly into the bottom and up the sides of a pie plate. Place the crust in the refrigerator to chill while you prepare the filling.
- Make the cream cheese filling: In the bowl of a stand mixer, beat the softened cream cheese together with the powdered sugar until the mixture is smooth and creamy, about 2 minutes.
- Add flavor and cream: Add the vanilla extract and heavy whipping cream to the cream cheese mixture. Continue beating until fully combined and slightly fluffy, approximately another 2 minutes.
- Assemble the cheesecake: Spoon the cream cheese filling into the chilled crust, spreading it evenly with the back of a spoon. Return the assembled cheesecake to the refrigerator to chill for 2 to 3 hours, allowing it to set properly.
- Add topping and serve: Once the cheesecake has chilled and firmed up, spoon the cherry pie filling over the top just before serving. Slice and enjoy!
