Description

This No-Bake Greek Yogurt Fruit Tart is a refreshing and healthy dessert featuring a naturally sweet nut and date crust, creamy Greek yogurt filling, and vibrant fresh fruit topping. Easy to prepare without any baking, it’s perfect for a quick, wholesome treat any time of the year.

Ingredients

Crust

  • 15 pitted Medjool dates (about 230g), soaked in warm water for 10 minutes
  • 3/4 cup (100g) unsalted cashews
  • 3/4 cup (100g) unsalted almonds

Filling

  • 1 cup (250g) Greek yogurt (plain or any flavor)

Topping

  • Assorted sliced fresh fruit (e.g., berries, kiwi, mango, peaches, etc.)
  • Optional: 2 Tablespoons apricot preserves mixed with 1 Tablespoon water for brushing

Instructions

  1. Prepare Tart Pan: Spray the bottom of a 9-inch tart pan, cake pan, or pie dish with nonstick spray and line with a parchment paper circle slightly larger than the pan. The parchment keeps the crust from sticking and the spray helps it stay in place.
  2. Soak and Process Dates: Soak the 15 pitted Medjool dates in warm water for 10 minutes to soften them. Drain thoroughly and cut the dates in half to prepare for blending.
  3. Make Crust Dough: In a food processor or blender, pulse the soaked dates, cashews, and almonds together until they form a sticky, thick dough with the nuts broken up but still slightly textured.
  4. Form Crust: Press the nut-date dough evenly into the prepared tart pan, covering the bottom and partially pressing it up the sides to create a crust shell.
  5. Add Yogurt Filling: Spread the Greek yogurt evenly over the crust, creating a smooth layer.
  6. Decorate with Fruit: Arrange your sliced fresh fruit attractively on top of the yogurt layer.
  7. Optional Glaze: If desired, mix apricot preserves with water and brush gently over the fruit to add a glossy finish.
  8. Serve or Refrigerate: Slice and serve immediately, or cover and refrigerate for up to 1 day before serving. Store leftovers covered in the fridge for up to 3 days.

Notes

  • Ensure dates are soft by soaking well; this helps create a cohesive crust.
  • Use parchment paper to prevent sticking and make tart removal easy.
  • Customize the fruit topping based on seasonal availability and preference.
  • The optional apricot glaze adds shine and a touch of sweetness but can be omitted.
  • This tart is best enjoyed within 1 day for optimal freshness but can last up to 3 days refrigerated.
