Ingredients
Crust
- 400 g Digestive biscuits
- 150 g unsalted butter (melted)
Peach Topping
- 5 peaches (sliced)
- 1/3 cup brown sugar
- 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp lemon juice
- 3 tsp water
- 3 tsp cornstarch
Streusel
- ¼ cup all-purpose flour
- 2 1/3 tsp brown sugar
- 1 1/4 tsp sugar
- a pinch of salt
- 1 tablespoon (17 g) unsalted butter (melted and cooled)
Creamy Filling
- 460 g cream cheese (room temperature)
- 75 g granulated sugar
- 1 teaspoon vanilla extract
- 245 ml whipped cream (room temperature)

Instructions
- Prepare the Crust: Blitz digestive biscuits in a food processor until crumb-like, or crush manually using a rolling pin in a sealed bag. Mix crumbs with melted butter until combined. Press evenly into a square springform pan, cover with plastic wrap, and refrigerate for 30 minutes to set.
- Make Peach Topping: Slice peaches evenly after removing pits. Combine peaches, brown sugar, cinnamon, nutmeg, lemon juice, water, and cornstarch in a small pot. Cook over medium-high heat, stirring occasionally, until caramelized and thickened, about 8-12 minutes. Allow to cool.
- Prepare Streusel: Melt butter in a small pot over medium-low heat. Remove from heat and stir in flour, brown sugar, regular sugar, and salt until well combined. Let cool.
- Make Creamy Filling: Whisk heavy cream until stiff peaks form. Gently fold in cream cheese, granulated sugar, and vanilla extract until smooth and combined.
- Assemble Bars: Remove crust from fridge and unwrap. Spread the cream cheese filling evenly over the crust. Pour the cooled peach topping over the filling and gently flatten. Sprinkle streusel evenly on top. Cover with plastic wrap and refrigerate for 6 hours to set.
- Serve: Once set, cut into 9-6 equal-sized bars. Top each serving with whipped cream and drizzle caramel sauce before serving.
