Ingredients

Vegetables and Herbs

  • 8 oz baby spinach, washed and chopped
  • 4 green onions, sliced
  • 1 small shallot, peeled and minced
  • 2 tablespoons minced fresh dill
  • 1 tablespoon minced fresh mint
  • 2 tablespoons minced fresh parsley

Dry Ingredients

  • 1½ cups all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon lemon zest
  • 2 tablespoons Parmesan cheese

Wet Ingredients

  • ¼ cup olive oil + 2 tablespoons plus more for drizzling
  • 1 cup plain Greek yogurt
  • 6 oz feta cheese, crumbled
  • 2 large eggs


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 11×8 or 8×8 inch baking pan well with olive oil and set aside.
  2. Sauté Vegetables and Herbs: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the spinach, shallot, green onions, mint, dill, and parsley. Cook, stirring often, until the spinach has wilted and the shallot is softened, approximately 5 minutes. Remove from heat and allow the mixture to cool slightly.
  3. Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, salt, and pepper until well combined.
  4. Combine Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, eggs, remaining olive oil, and lemon zest until smooth and fully combined.
  5. Add Cheese and Spinach Mixture: Stir the crumbled feta cheese and the cooled spinach and herb mixture into the yogurt batter until evenly incorporated.
  6. Add Dry Ingredients: Add the flour mixture to the wet ingredients. Stir gently but thoroughly until the flour is fully incorporated and the batter is smooth.
  7. Transfer to Pan and Prepare for Baking: Pour the batter into the prepared baking pan and spread it out evenly. Drizzle a little extra olive oil over the top and then sprinkle the Parmesan cheese evenly across the surface.
  8. Bake: Place the pan in the preheated oven and bake for 30 to 40 minutes, or until the top and edges are deeply golden brown and a knife inserted near the center comes out clean.
