- 8 oz baby spinach, washed and chopped
- 4 green onions, sliced
- 1 small shallot, peeled and minced
- 2 tablespoons minced fresh dill
- 1 tablespoon minced fresh mint
- 2 tablespoons minced fresh parsley
Dry Ingredients
- 1½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 teaspoon lemon zest
- 2 tablespoons Parmesan cheese
Wet Ingredients
- ¼ cup olive oil + 2 tablespoons plus more for drizzling
- 1 cup plain Greek yogurt
- 6 oz feta cheese, crumbled
- 2 large eggs
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 11×8 or 8×8 inch baking pan well with olive oil and set aside.
- Sauté Vegetables and Herbs: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the spinach, shallot, green onions, mint, dill, and parsley. Cook, stirring often, until the spinach has wilted and the shallot is softened, approximately 5 minutes. Remove from heat and allow the mixture to cool slightly.
- Mix Dry Ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, salt, and pepper until well combined.
- Combine Wet Ingredients: In a large mixing bowl, whisk together the Greek yogurt, eggs, remaining olive oil, and lemon zest until smooth and fully combined.
- Add Cheese and Spinach Mixture: Stir the crumbled feta cheese and the cooled spinach and herb mixture into the yogurt batter until evenly incorporated.
- Add Dry Ingredients: Add the flour mixture to the wet ingredients. Stir gently but thoroughly until the flour is fully incorporated and the batter is smooth.
- Transfer to Pan and Prepare for Baking: Pour the batter into the prepared baking pan and spread it out evenly. Drizzle a little extra olive oil over the top and then sprinkle the Parmesan cheese evenly across the surface.
- Bake: Place the pan in the preheated oven and bake for 30 to 40 minutes, or until the top and edges are deeply golden brown and a knife inserted near the center comes out clean.
