Ingredients

Wet Ingredients

  • 3 large overripe bananas
  • 90 ml (¼ cup + 3 tbsp) vegetable oil
  • 210 ml (¾ cup + 2 tbsp) milk
  • 2 large eggs
  • 1 tsp vanilla extract

Dry Ingredients

  • 420 g (3 cups) plain (all-purpose) flour
  • 1.5 tbsp baking powder
  • 0.75 tsp bicarbonate of soda (baking soda)
  • 0.75 tsp salt

Other Ingredients

  • 150 g (¾ cup) caster sugar
  • 250 g (¾ cup + 2 tbsp) Nutella


Instructions

  1. Preheat and prepare: Preheat your oven to 170°C (340°F) and line a loaf tin with parchment paper to prevent sticking and ensure easy removal of the banana bread.
  2. Mix wet ingredients: Mash the overripe bananas thoroughly, then transfer them into a large jug. Add vegetable oil, milk, eggs, vanilla extract, and caster sugar. Whisk all these ingredients together until smooth and well combined.
  3. Combine dry ingredients: In a large bowl, sift together the plain flour, baking powder, bicarbonate of soda, and salt. Whisk these dry ingredients to ensure they are evenly mixed.
  4. Make the batter: Pour the wet banana mixture into the dry ingredients. Gently fold everything together with a spatula until just combined, being careful not to overmix to keep the bread tender.
  5. Divide and mix Nutella: Split the batter into two portions, one slightly larger than the other. Warm the Nutella slightly to make it easier to stir, then fold it thoroughly into the smaller portion of the batter.
  6. Layer the batter: Alternate dollops of the plain batter and the Nutella batter into the prepared loaf tin, layering them evenly to create a marbled effect.
  7. Bake: Place the loaf tin in the preheated oven and bake for 60-70 minutes. Check doneness by inserting a skewer or toothpick; it should come out clean when the bread is fully baked. If the top is browning too quickly, tent with foil to prevent burning.
  8. Cool: Allow the banana bread to cool in the loaf tin for about 30 minutes, then remove it from the tin and transfer to a cooling rack to cool completely before slicing and serving.
