Instructions

  1. Caramelize Onions: Heat olive oil in a large pot over medium heat. Add minced garlic and fresh thyme, cooking for an additional 2 minutes to release their aromas.
  2. Deglaze the Pot: Pour in the white chicken broth or substitute broth to deglaze the pot. Scrape up any browned bits stuck to the bottom – these will add great flavor to the dish.
  3. Add Broth and Pasta: Add the vegetable broth and uncooked pasta to the pot. Bring the mixture to a light boil, then reduce heat to medium-low, cover, and let simmer for 8 to 12 minutes, or until the pasta is al dente and has absorbed some of the broth.
