- 1 tablespoon avocado oil
- 2 chicken breasts, halved
- ½ teaspoon coarse kosher salt
- ½ teaspoon black pepper
Sauce
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup cream of chicken soup
- ½ cup chicken stock
- 1 teaspoon low-sodium chicken Better Than Bouillon
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- 1 cup grated or shredded Parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Heat oil: Add the avocado oil to a skillet and heat over medium heat for 2-3 minutes until hot.
- Season chicken: Season both sides of the halved chicken breasts with coarse kosher salt and black pepper.
- Sauté chicken: Place the chicken in the skillet and sauté for 4 minutes, then flip and cook for an additional 3-4 minutes until the internal temperature reaches 165°F and juices run clear.
- Remove chicken: Take the chicken out of the skillet and set aside, covering with a lid to keep warm.
- Lower heat: Reduce skillet heat to low-medium.
- Sauté garlic: Add minced garlic to the skillet and stir for 1 minute until fragrant.
- Make sauce: Add heavy cream, cream of chicken soup, chicken stock, Better Than Bouillon, onion powder, garlic powder, paprika, dried thyme, and dried rosemary. Stir frequently until the sauce thickens.
- Add cheese: Stir in grated Parmesan cheese until the sauce is smooth and combined.
- Return chicken: Place the cooked chicken back into the skillet, submerging it in the sauce.
