Ingredients

Chicken

  • 1 tablespoon avocado oil
  • 2 chicken breasts, halved
  • ½ teaspoon coarse kosher salt
  • ½ teaspoon black pepper

Sauce

  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup cream of chicken soup
  • ½ cup chicken stock
  • 1 teaspoon low-sodium chicken Better Than Bouillon
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • 1 cup grated or shredded Parmesan cheese
  • 2 tablespoons chopped parsley


Instructions

  1. Heat oil: Add the avocado oil to a skillet and heat over medium heat for 2-3 minutes until hot.
  2. Season chicken: Season both sides of the halved chicken breasts with coarse kosher salt and black pepper.
  3. Sauté chicken: Place the chicken in the skillet and sauté for 4 minutes, then flip and cook for an additional 3-4 minutes until the internal temperature reaches 165°F and juices run clear.
  4. Remove chicken: Take the chicken out of the skillet and set aside, covering with a lid to keep warm.
  5. Lower heat: Reduce skillet heat to low-medium.
  6. Sauté garlic: Add minced garlic to the skillet and stir for 1 minute until fragrant.
  7. Make sauce: Add heavy cream, cream of chicken soup, chicken stock, Better Than Bouillon, onion powder, garlic powder, paprika, dried thyme, and dried rosemary. Stir frequently until the sauce thickens.
  8. Add cheese: Stir in grated Parmesan cheese until the sauce is smooth and combined.
  9. Return chicken: Place the cooked chicken back into the skillet, submerging it in the sauce.
  10. Simmer: Allow the chicken to gently simmer in the sauce to heat through.
  11. Serve: Spoon sauce over the chicken to fully smother it.
  12. Garnish: Sprinkle chopped parsley on top before serving.
