Ingredients
Dough
- 1 Tablespoon yeast
- 3 cups warm water
- 1 cup sugar
- 1 Tablespoon salt
- 2 beaten eggs
- 1/2 cup oil
- 10 cups flour (5 cups initially, plus 5 cups later)

Icing
- 1 lb powdered sugar
- 1 teaspoon vanilla extract

Instructions
- Activate Yeast: In a mixer bowl, combine yeast, warm water, and sugar. Stir lightly and let sit for 10 minutes until the mixture is foamy and the yeast is activated.
- Prepare Dough: Add salt, beaten eggs, oil, and 5 cups of flour to the yeast mixture. Mix on medium speed for 5 minutes until well combined.
- Knead Dough: Add the remaining 5 cups of flour to the mixer and knead on medium speed for 5 to 7 minutes until the dough is smooth and elastic.
- First Rise: Cover the dough and let it rise for 1 hour until doubled in size.
- Roll Dough and Add Filling: On a floured board, roll the dough into a large rectangle. Spread a layer of butter over the dough, then sprinkle evenly with sugar, brown sugar, and cinnamon to taste.
- Shape Rolls: Carefully roll the dough tightly into a log shape. Slice into individual rolls of desired thickness and place them into a well-greased or non-stick pan.
- Second Rise: Cover the pan with a thin cloth and let the rolls rise on the kitchen counter for 8 hours, allowing slow fermentation overnight.
- Bake: Preheat the oven to 350°F (175°C). Bake the cinnamon rolls for 12 to 15 minutes until they are golden brown.
- Cool and Frost: Allow the rolls to cool for a few minutes. Prepare the icing by mixing powdered sugar, vanilla, butter, and cream cheese, adding milk if necessary to reach desired consistency. Frost the warm rolls generously before serving.
