Description

This Overnight Sausage and Egg Breakfast Casserole is a hearty and comforting make-ahead dish perfect for busy mornings. It features savory sausage, sautéed bell peppers and onions, cubed bread, sharp cheddar cheese, and a custardy mixture of eggs and milk. Prepared the night before and baked in the morning, it delivers a satisfying and flavorful breakfast that serves 8.

Ingredients

Vegetables

  • ½ green or red bell pepper, diced
  • ½ medium onion, diced

Meat

  • 1 pound bulk sausage (your choice of mild to hot)

Bread and Cheese

  • 6 slices white bread, cubed
  • 8 ounces sharp cheddar cheese, grated

Egg Mixture

  • 8 eggs, beaten
  • 2 cups milk
  • 1 teaspoon dry mustard powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  1. Cook sausage and vegetables: In a large skillet over medium-high heat, cook the diced bell pepper, onion, and bulk sausage until the sausage is browned and cooked through, with no pink remaining. Drain the mixture on paper towels to remove excess fat.
  2. Prepare bread and cheese: Cut the white bread into approximately ½ inch cubes. Grate the sharp cheddar cheese and set aside.
  3. Mix eggs and seasonings: In a bowl, beat together the eggs, milk, dry mustard powder, salt, and ground black pepper until well combined.
  4. Assemble casserole layers: Lightly grease a 13×9 inch baking pan or casserole dish. Layer the bread cubes evenly at the bottom, followed by the cooked sausage and vegetable mixture, and then sprinkle the grated cheddar cheese on top.
  5. Add egg mixture: Pour the beaten egg and milk mixture evenly over the layered ingredients, ensuring it soaks into the bread cubes throughout.
  6. Refrigerate overnight: Cover the casserole dish tightly with foil and place it in the refrigerator overnight to let the flavors meld and the bread absorb the custard.
  7. Bake the casserole: The next morning, preheat your oven to 350°F (175°C). Remove the foil and bake the casserole uncovered for 45 minutes, or until the top is set and golden brown.

Notes

  • You can use either green or red bell peppers based on your preference; both add great flavor.
  • The recipe can be made spicier by choosing hot sausage varieties.
  • For a richer flavor, substitute part or all of the milk with half-and-half or cream.
  • Allow the casserole to rest for a few minutes after baking for easier serving.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
