Ingredients

Ramen & Sauce Ingredients

  • 2 packs OTOKI Cheddar & Mascarpone Cheesy Ramen
  • 2 tbsp butter (divided)
  • 3 garlic cloves (minced)
  • ¼ cup heavy cream
  • ¼ cup freshly grated Parmesan
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • Parsley (optional, for garnish)

Chicken

  • 2 chicken breasts, butterflied
  • 1 tbsp olive oil


Instructions

  1. Season the chicken: Pat the butterflied chicken breasts dry and season both sides evenly with paprika, garlic powder, salt, and pepper to ensure a flavorful sear.
  2. Cook the chicken: Heat olive oil and 1 tablespoon of butter in a pan over medium heat. Once hot, add the chicken breasts.
  3. Sear the chicken: Cook the chicken for 4 to 5 minutes on each side until they develop a golden crust and are cooked through. Remove the chicken from the pan and slice it into strips.
  4. Cook the ramen: Boil the ramen noodles in a pot of water for about 2 minutes or until just tender. Drain the noodles, reserving about ¼ cup of the cooking water to use in the sauce.
  5. Build the sauce: In the same pan used for the chicken, melt the remaining tablespoon of butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant but not browned.
  6. Add cream and seasoning: Pour in the heavy cream and stir in the seasoning packets from the ramen. Mix until the sauce is smooth and well combined.
  7. Toss noodles in sauce: Return the drained noodles to the pan and add a splash of the reserved ramen water. Toss everything together over medium heat until the sauce becomes glossy and evenly coats the noodles.
  8. Finish with Parmesan and chicken: Stir in the grated Parmesan cheese until melted and creamy. Then top the dish with the sliced chicken and garnish with parsley if desired.

  • Butterflying the chicken breasts helps them cook evenly and faster.
  • Be careful not to overcook the chicken to keep it juicy and tender.
  • Reserve some pasta water to adjust sauce consistency if needed.
  • You can substitute Parmesan with Pecorino Romano for a sharper flavor.
  • Adding fresh parsley adds a nice pop of color and freshness but is optional.
