Description

Crispy and flavorful Parmesan Truffle Roasted Fingerling Potatoes, seasoned with truffle oil, truffle salt, and fresh herbs. These golden, tender potatoes are perfect as a sophisticated side dish, featuring a delightful combination of creamy parmesan and aromatic truffle flavors.

Ingredients

Potatoes

  • 1 ½ pounds (680 grams) fingerling potatoes, cut in half lengthwise

Seasoning & Oils

  • 2 tablespoons avocado oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon truffle oil (preferably white truffle oil)
  • Sprinkle of truffle salt

Finishing Touches

  • Finely grated parmesan cheese (to taste)
  • 1 tablespoon finely chopped fresh parsley
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the potatoes to a crispy texture.
  2. Prep Potatoes: Cut the fingerling potatoes lengthwise in half to expose a flat surface that will crisp nicely during roasting.
  3. Season Potatoes: Place the halved potatoes in a bowl or directly on a baking sheet and drizzle with avocado oil, sea salt, and freshly ground black pepper. Toss well to coat all pieces evenly.
  4. Arrange Potatoes: Spread the potatoes out in a single layer on the baking sheet with the cut side facing down to maximize contact for crispness.
  5. Roast Potatoes: Bake in the preheated oven for 30-35 minutes, or until the potatoes are tender inside and have developed a golden, crispy bottom on the cut side. The exact time may vary depending on the potato size.
  6. Add Truffle Flavors: Remove the potatoes from the oven and while they are hot, immediately drizzle truffle oil over them and sprinkle with truffle salt. Gently toss to distribute the flavors evenly.
  7. Finish and Serve: Transfer the potatoes to a serving bowl, then sprinkle generously with finely grated parmesan, chopped fresh parsley, and lemon zest (if using). Serve immediately while warm and enjoy the rich, earthy flavors.

Notes

  • For best flavor, use white truffle oil, but black truffle oil can also be used.
  • Ensure potatoes are spread in a single layer for even roasting and crispiness.
  • The lemon zest is optional but adds a fresh brightness that complements the truffle and parmesan.
  • Adjust the amount of parmesan according to your preference for cheesiness.
  • These potatoes are best served immediately to enjoy their crisp texture.
