Instructions

- Cook chicken: Place the floured chicken breasts in the hot skillet. Cook for 2-3 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.
- Sauté onions and deglaze: Reduce heat to medium and add the sliced red onion to the skillet along with the white wine or chicken broth. Scrape the bottom of the skillet to lift any browned bits. Cook for 3-4 minutes until onions soften and liquid mostly evaporates.
- Add peaches and balsamic: Add the sliced peaches, balsamic vinegar, and chopped fresh basil to the skillet. Simmer for 2-3 minutes allowing flavors to meld and peaches to soften slightly.
- Return chicken and melt cheese: Return the chicken breasts to the skillet, nestling them among the peaches and onions. Place a slice of mozzarella cheese on top of each chicken breast. Cover the skillet and cook for about 2 more minutes until the cheese melts.
- Serve: Uncover the skillet and spoon some of the peach sauce over each chicken breast. Garnish with extra fresh basil leaves if desired and serve immediately.
