Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 3 very ripe, darkly speckled bananas, mashed well (about 1 1/2 cups)
  • 1/4 cup buttermilk
  • 2 large eggs, lightly beaten
  • 6 Tablespoons unsalted butter, melted and cooled
  • 1 1/2 teaspoons vanilla extract
  • 1/3 cup creamy peanut butter

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) to ensure it’s ready for baking the bread.
  2. Prepare Baking Pan: Line a 9-inch loaf pan with parchment paper and lightly grease the parchment with cooking spray to prevent sticking.
  3. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking soda, and salt until well combined. Set aside.
  4. Combine Wet Ingredients: In a separate medium bowl, whisk together the mashed ripe bananas, buttermilk, lightly beaten eggs, melted and cooled unsalted butter, vanilla extract, and creamy peanut butter until fully incorporated.
  5. Combine Wet and Dry Mixtures: Gently fold the banana peanut butter mixture into the dry ingredients using a rubber spatula, mixing just until combined. The batter will be thick and chunky. Then fold in the peanut butter chips evenly.
  6. Transfer to Pan and Bake: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for about 55 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the Bread: Let the bread cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely before slicing and serving. Store any leftovers wrapped securely at room temperature or refrigerated.
