Wet Ingredients
- 3 very ripe, darkly speckled bananas, mashed well (about 1 1/2 cups)
- 1/4 cup buttermilk
- 2 large eggs, lightly beaten
- 6 Tablespoons unsalted butter, melted and cooled
- 1 1/2 teaspoons vanilla extract
- 1/3 cup creamy peanut butter

Instructions
- Preheat Oven: Preheat your oven to 350ºF (175ºC) to ensure it’s ready for baking the bread.
- Prepare Baking Pan: Line a 9-inch loaf pan with parchment paper and lightly grease the parchment with cooking spray to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking soda, and salt until well combined. Set aside.
- Combine Wet Ingredients: In a separate medium bowl, whisk together the mashed ripe bananas, buttermilk, lightly beaten eggs, melted and cooled unsalted butter, vanilla extract, and creamy peanut butter until fully incorporated.
- Combine Wet and Dry Mixtures: Gently fold the banana peanut butter mixture into the dry ingredients using a rubber spatula, mixing just until combined. The batter will be thick and chunky. Then fold in the peanut butter chips evenly.
- Transfer to Pan and Bake: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for about 55 minutes or until a toothpick inserted into the center comes out clean.
- Cool the Bread: Let the bread cool in the pan for 5 minutes, then transfer it to a wire rack to cool completely before slicing and serving. Store any leftovers wrapped securely at room temperature or refrigerated.
