Combining the tangy sweetness of pineapple with creamy whipped cream and sharp cheddar cheese, it offers a unique blend of flavors and textures. The salad is set with lemon gelatin, chilled until firm for a cool, creamy treat that serves eight.
Ingredients
Gelatin Mixture
- 1 box lemon gelatin (3 oz / 85 g)
- 1 cup boiling water
- 1 cup well-chilled pineapple juice (reserved from canned crushed pineapple)
Salad Ingredients
- 1 can crushed pineapple (drained very well; 540 ml / 20 oz can)
- 1 cup shredded cheddar cheese (plus extra for garnish)
- 1 cup whipping cream (whipped to soft peaks)
Instructions
- Dissolve Gelatin: In a bowl, dissolve the lemon gelatin in 1 cup of boiling water, stirring continuously for about 1 minute to ensure it is fully dissolved.
- Cool Gelatin Mixture: Stir in the reserved cold pineapple juice, then place the mixture in the fridge to cool until it reaches a syrupy consistency, approximately 1 to 1½ hours.
- Combine Ingredients: Gently fold the drained crushed pineapple, shredded cheddar cheese, and whipped cream into the cooled gelatin mixture until evenly incorporated.
- Chill to Set: Lightly oil a bowl or dish with cooking spray, pour in the mixture, and refrigerate for 4 to 6 hours until the salad is firm and set.
- Garnish and Serve: Before serving, garnish the top with additional shredded cheddar cheese if desired for an extra flavor pop.
Notes
- Ensure the pineapple is well-drained to avoid excess liquid diluting the gelatin mixture.
- Whip the cream to soft peaks to provide the best texture and stability in the salad.
- This salad is best served chilled and can be prepared a day in advance to allow flavors to meld.
- For a twist, consider adding chopped nuts or maraschino cherries for extra texture and color.
- Use a lightly oiled dish to make removal easier and to prevent sticking when unmolding.
