Salad Ingredients

  • 1 can crushed pineapple (drained very well; 540 ml / 20 oz can)
  • 1 cup shredded cheddar cheese (plus extra for garnish)
  • 1 cup whipping cream (whipped to soft peaks)


Instructions

  1. Dissolve Gelatin: In a bowl, dissolve the lemon gelatin in 1 cup of boiling water, stirring continuously for about 1 minute to ensure it is fully dissolved.
  2. Cool Gelatin Mixture: Stir in the reserved cold pineapple juice, then place the mixture in the fridge to cool until it reaches a syrupy consistency, approximately 1 to 1½ hours.
  3. Combine Ingredients: Gently fold the drained crushed pineapple, shredded cheddar cheese, and whipped cream into the cooled gelatin mixture until evenly incorporated.
  4. Chill to Set: Lightly oil a bowl or dish with cooking spray, pour in the mixture, and refrigerate for 4 to 6 hours until the salad is firm and set.
