Description

This Pistachio Fluff recipe is a delightful, fruity dessert salad combining pineapple, mandarin oranges, mini marshmallows, instant pistachio pudding mix, cherries, pecans, and coconut flakes, all folded into creamy whipped topping. Perfectly chilled, it’s a refreshing and sweet treat ideal for potlucks, picnics, or holiday gatherings.

Ingredients

Fruits

  • 20 ounce can crushed pineapple (NOT drained)
  • 15 ounce can mandarin oranges (drained very well)
  • 1/2 cup cherries (drained, rinsed, stems removed and chopped)

Dried and Nuts

  • 1/2 cup chopped pecans
  • 1/3 cup sweetened flaked coconut

Other Ingredients

  • 2 cups mini marshmallows
  • 2 (3.4 oz) packages instant pistachio pudding mix
  • 8 ounce container frozen whipped topping (thawed)

Instructions

  1. Combine Ingredients: In a large bowl, stir together the crushed pineapple (with juice), drained mandarin oranges, mini marshmallows, instant pistachio pudding mixes, chopped cherries, chopped pecans, and sweetened flaked coconut until evenly combined.
  2. Fold in Whipped Topping: Gently fold in the thawed frozen whipped topping until the entire mixture is well coated and fluffy, making sure not to deflate the whipped topping.
  3. Chill the Salad: Cover the bowl with plastic wrap and refrigerate the pistachio fluff for at least 2 hours. For best flavor and texture, chilling for longer is recommended before serving.

Notes

  • Do not drain the crushed pineapple to maintain moisture and flavor.
  • Ensure mandarin oranges and cherries are well drained to avoid excess liquid.
  • For added texture, you may toast the pecans lightly before adding.
  • This salad tastes best after several hours of chilling to allow flavors to meld.
  • Can be made a day ahead and stored refrigerated in an airtight container.
