  • 1 cup shredded mozzarella cheese
  • Mini pepperonis (about 4-5 per muffin)


Instructions

  1. Preheat and prepare baking tin: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with parchment paper liners or lightly grease each cup with nonstick cooking spray to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the Bisquick baking mix, Italian seasoning, and garlic powder until the mixture is smooth and free of lumps, ensuring even seasoning distribution.
  3. Combine wet ingredients: In a separate smaller bowl, whisk the eggs and whole milk together until fully combined to create the wet base for the batter.
  4. Make the batter: Pour the wet ingredients into the dry ingredients bowl. Gently stir with a spatula until just combined; be careful not to overmix. The batter should be thick but easily scoopable.
  5. Add cheese to batter: Fold in ½ cup shredded mozzarella cheese evenly throughout the batter to add melty cheesy pockets inside the muffins.
  6. Fill muffin cups: Divide the biscuit dough evenly among the prepared muffin cups, filling each about 3/4 full to allow room for rising and toppings.
