Ingredients
Potato Mixture
- 200 g potatoes (peeled)
- Salt (to taste)
- ⅓ cup all-purpose flour (50 g)
- 100 g cheese (cut into small cubes)
Breading and Coating
- 1 egg
- 1 tbsp milk (20 g)
- ⅓ cup all-purpose flour (50 g)
- 1 pinch salt
- 1 pinch black pepper
- ¼ tsp paprika
- Bread crumbs (as needed)
- Oil (for deep frying)
Instructions
- Boil Potatoes: Boil the peeled potatoes in salted water until they are soft and can be easily pierced with a fork, ensuring they are fully cooked and tender.
- Mash Potatoes: Drain the potatoes well and mash them while still warm to create a smooth base for the croquette dough.
- Mix Dough: Add salt and ⅓ cup of all-purpose flour to the mashed potatoes, mixing thoroughly until a smooth dough forms.
- Shape Dough: Take a small amount of the potato mixture and flatten it in your palm to prepare for filling.
- Add Cheese: Place a cube of cheese in the center of the flattened dough, then gently roll it into a ball, ensuring the cheese is fully enclosed. Repeat with all the mixture.
- Prepare Coating Mixture: In a shallow bowl, whisk together the egg, milk, ⅓ cup flour, salt, black pepper, and paprika until smooth to create the batter for dipping.
- Coat Croquettes: Dip each potato ball into the egg mixture, coating it well, then roll it in bread crumbs until fully covered for a crispy exterior.
- Heat Oil: Heat oil in a deep pot or fryer to 350°F (175°C), the optimal temperature for deep frying croquettes.
- Fry Croquettes: Fry the coated croquettes in batches for 2–3 minutes or until they turn golden and crispy all over.
- Drain and Cool: Remove the croquettes and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before serving.
- Serve: Serve the Potato Cheese Croquettes warm with your favorite dipping sauce for a delicious appetizer or snack.
