Description

Crispy and delicious Potato Cheese Croquettes are golden-fried bites filled with creamy melted cheese encased in a smooth mashed potato dough. Perfect as an appetizer or snack, these croquettes boast a crunchy breadcrumb coating and a soft, cheesy center, making them irresistible for all cheese and potato lovers.

Ingredients

Potato Mixture

  • 200 g potatoes (peeled)
  • Salt (to taste)
  • ⅓ cup all-purpose flour (50 g)
  • 100 g cheese (cut into small cubes)

Breading and Coating

  • 1 egg
  • 1 tbsp milk (20 g)
  • ⅓ cup all-purpose flour (50 g)
  • 1 pinch salt
  • 1 pinch black pepper
  • ¼ tsp paprika
  • Bread crumbs (as needed)
  • Oil (for deep frying)

Instructions

  1. Boil Potatoes: Boil the peeled potatoes in salted water until they are soft and can be easily pierced with a fork, ensuring they are fully cooked and tender.
  2. Mash Potatoes: Drain the potatoes well and mash them while still warm to create a smooth base for the croquette dough.
  3. Mix Dough: Add salt and ⅓ cup of all-purpose flour to the mashed potatoes, mixing thoroughly until a smooth dough forms.
  4. Shape Dough: Take a small amount of the potato mixture and flatten it in your palm to prepare for filling.
  5. Add Cheese: Place a cube of cheese in the center of the flattened dough, then gently roll it into a ball, ensuring the cheese is fully enclosed. Repeat with all the mixture.
  6. Prepare Coating Mixture: In a shallow bowl, whisk together the egg, milk, ⅓ cup flour, salt, black pepper, and paprika until smooth to create the batter for dipping.
  7. Coat Croquettes: Dip each potato ball into the egg mixture, coating it well, then roll it in bread crumbs until fully covered for a crispy exterior.
  8. Heat Oil: Heat oil in a deep pot or fryer to 350°F (175°C), the optimal temperature for deep frying croquettes.
  9. Fry Croquettes: Fry the coated croquettes in batches for 2–3 minutes or until they turn golden and crispy all over.
  10. Drain and Cool: Remove the croquettes and place them on a paper towel-lined plate to drain excess oil. Let them cool slightly before serving.
  11. Serve: Serve the Potato Cheese Croquettes warm with your favorite dipping sauce for a delicious appetizer or snack.

Notes

  • Ensure potatoes are well mashed without lumps to create a smooth dough.
  • Use cheese cubes that melt well such as mozzarella or cheddar for a gooey center.
  • Fry in batches to maintain oil temperature and ensure even cooking.
  • Serve immediately for the best texture and flavor.
  • Leftover croquettes can be reheated in an air fryer for crispiness.
