Description

A refreshing and nutritious breakfast inspired by Princess Diana, featuring overnight oats soaked in fresh orange juice and layered with vibrant fruits and crunchy walnuts. This simple, make-ahead recipe combines the natural sweetness of honeycrisp apples, fresh blueberries, and a hint of cinnamon for a delicious, wholesome start to your day.

Ingredients

Base

  • 1 cup rolled oats
  • ½ cup orange juice (fresh squeezed from 3 Valencia oranges)
  • Pinch of fine salt

Mix-ins

  • 2 tablespoons vegan Greek yogurt (plus extra for garnish)
  • 1 tablespoon fresh lemon juice (from ½ small lemon)
  • ½ Honeycrisp apple, grated with skin on (¼ cup into oats and extra for topping)
  • ¼ cup raw or toasted walnuts, roughly chopped (plus more for garnish)
  • 1 tablespoon pure maple syrup
  • ⅛ teaspoon ground cinnamon

Garnish

  • ¼ cup fresh blueberries
  • Extra chopped walnuts
  • Extra grated apple
  • Extra vegan Greek yogurt

Instructions

  1. Prepare oats the night before: In a covered glass container, combine the rolled oats with fresh orange juice and a pinch of fine salt. Stir gently to combine, then cover and refrigerate overnight to allow the oats to soak and soften.
  2. Mix in flavorings and toppings: The next morning, remove the oats from the fridge and stir in the vegan Greek yogurt, fresh lemon juice, grated apple, chopped walnuts, pure maple syrup, and ground cinnamon until evenly distributed.
  3. Garnish and serve: Plate the oats in bowls and top with fresh blueberries, additional chopped walnuts, extra grated apple, and a dollop of vegan Greek yogurt. Enjoy immediately for a fresh, nutrient-packed breakfast.

Notes

  • The orange juice can be freshly squeezed or store-bought, but fresh Valencia oranges provide the best flavor.
  • To toast walnuts, place them in a dry skillet over medium heat for 3-5 minutes until fragrant, stirring frequently.
  • Adjust sweetness by adding more or less maple syrup to taste.
  • For a creamier texture, increase the amount of vegan Greek yogurt.
  • This recipe is vegan and naturally gluten-free if using certified gluten-free oats.
