- Add the cheese and seasonings: Carefully place the provolone wheel into the hot skillet. Sprinkle the chopped fresh oregano and red pepper flakes evenly over the top of the cheese to impart aromatic and spicy notes.
- Cook the cheese: Close the grill lid and let the cheese cook for approximately 5 minutes, or until it becomes fully melted and bubbly. Keep an eye to avoid overcooking or burning.
- Serve hot: Using caution, remove the hot cast iron skillet from the grill. Serve the provoleta immediately while warm, accompanied by toasted baguette slices for dipping and pairing.
