Ingredients

  • 4 ounces pancetta or bacon, diced

  • 1 large egg, whisked with 1 tablespoon water (for egg wash)
  • 3-4 tablespoons everything bagel seasoning

Eggs and Seasoning

  • 4-6 large eggs
  • Kosher salt, to taste

Instructions

  1. Prep the Oven and Ingredients: Preheat your oven to 400 degrees F and position a rack in the center. Line a baking sheet with parchment paper. Prepare all your ingredients by dicing the pancetta, grating the cheese, and whisking the egg wash.
  2. Cook the Pancetta: Heat a large skillet over medium heat, then add the diced pancetta. Cook for about 5 minutes, stirring occasionally until it becomes golden brown and crispy. Use a slotted spoon to transfer the pancetta to a plate, letting excess fat drain. Set aside.
  3. Assemble the Puff Pastry: Unfold the puff pastry onto the prepared baking sheet. Gently score a one-inch border around the edges with a paring knife without cutting all the way through. Brush the border with the egg wash and sprinkle everything bagel seasoning over this border to create a flavorful crust. Use a fork to prick the center of the pastry all over to prevent excessive puffing.
  4. Add Cheese and Pancetta, Create Wells: Evenly sprinkle the grated Gruyère cheese over the center of the puff pastry, followed by the crispy pancetta. With the back of a spoon or spatula, create 4-6 small indentations or wells in the cheese where you will crack the eggs later.
