- ½ cup pumpkin purée
- 1 tsp vanilla extract
- ⅓ cup coconut oil (melted)

- ½ tsp almond milk or water (more as needed for desired thickness)
Instructions
- Prepare Dry Ingredients: Preheat your oven to 350 ºF (175 ºC). In a large bowl, whisk together all the dry ingredients: white sugar, all-purpose flour, baking powder, salt, pumpkin spice, cinnamon, optional nutmeg, and oats until well combined.
- Combine Wet Ingredients: Create a well in the center of the dry ingredients and add the wet ingredients—melted coconut oil, vanilla extract, pumpkin purée, and egg. Mix thoroughly with a spoon until a uniform cookie dough forms.
- Form and Bake Cookies: Shape the dough into 1-inch balls and place them onto a parchment-lined baking sheet or directly on the baking sheet, spacing them evenly. Bake in the preheated oven for 12-14 minutes or until the edges are lightly golden.
- Cool the Cookies: Allow the cookies to cool on the baking sheet for a few minutes so they set and stick together. Try not to handle them too much during this time to prevent breaking.
- Prepare the Icing (Optional): While cookies cool, combine powdered sugar and almond milk (or water) in a small bowl. Whisk briskly until smooth. Adjust the consistency by adding more liquid to thin or more powdered sugar to thicken as needed.
- Apply the Icing: Once cookies are fully cooled and firm, gently dip each cookie into the icing or drizzle the icing over them. Allow the icing to set before serving.

- All-purpose flour can be substituted with gluten-free flour for a gluten-free version.
