Description

This Raspberry Pretzel Salad is a deliciously sweet and tangy layered dessert featuring a crunchy pretzel crust, creamy sweetened cream cheese filling, and a bright raspberry gelatin topping studded with frozen raspberries. Perfect for potlucks or family gatherings, it offers a delightful combination of textures and flavors that will impress any crowd.

Ingredients

Crust

  • 3 cups tiny pretzel twists
  • ¼ cup granulated sugar
  • 8 tablespoons unsalted butter (melted)

Cream Cheese Layer

  • 16 ounces cream cheese (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces frozen whipped topping (thawed according to package directions)

Raspberry Gelatin Layer

  • 6 ounces raspberry flavored gelatin
  • 2 cups boiling water
  • 16 ounces frozen raspberries (do not thaw)

Instructions

  1. Preheat Oven and Prepare Pretzel Crust: Preheat your oven to 350°F. Place the pretzels into a gallon-size zip-top bag and crush them into coarse crumbs using a rolling pin or pulse them briefly in a food processor, ensuring some texture remains.
  2. Mix and Bake Crust: In a mixing bowl, combine the crushed pretzels with the sugar and melted butter. Press this mixture evenly into the bottom of a 9×13-inch glass baking dish. Bake the crust for 10 minutes, then remove from oven and allow it to cool completely on a wire rack.
  3. Prepare Cream Cheese Layer: Using an electric mixer, beat the softened cream cheese, sugar, and vanilla extract on medium speed for about 5 minutes, scraping the bowl sides as needed for smoothness. Fold in the thawed whipped topping gently with a rubber spatula.
  4. Assemble Cream Cheese Layer: Spread the cream cheese mixture evenly over the cooled pretzel crust, making sure to cover from edge to edge to prevent seepage. Cover and refrigerate this layer for one hour to set.
  5. Make Raspberry Gelatin Mixture: Whisk the raspberry gelatin powder into the boiling water for about 2 minutes until fully dissolved. Stir in the frozen raspberries and let the mixture rest for 2 minutes.
  6. Top and Chill: Spoon the raspberry gelatin and raspberry mixture evenly over the chilled cream cheese layer. Cover the entire dish and refrigerate for at least 6 hours, allowing the gelatin to fully set before serving.

Notes

  • Do not thaw the frozen raspberries before adding them to the gelatin; this helps keep them firm and distributed evenly.
  • For a crunchier crust, ensure you do not over-process the pretzels when crushing.
  • Make sure the cream cheese is well softened before mixing for a smoother filling.
  • This dessert is best prepared a day ahead to allow the layers to set perfectly.
