Ingredients

Raspberry Layer

Yogurt Layer

  • 1 cup plain Greek yogurt or coconut yogurt
  • 1 teaspoon vanilla extract
  • 1 tablespoon raw honey or pure maple syrup (remaining)

Toppings

  • 1/2 cup granola

Instructions

  1. Prepare Raspberry Mixture: Mash the thawed raspberries in a bowl using a fork until slightly chunky. Add half of the honey and all the chia seeds to the raspberries, then stir to combine well. Let this mixture sit for a few minutes to allow the chia seeds to swell and thicken the mixture.
  2. Make Yogurt Base: In a separate bowl, whisk together the plain Greek yogurt with the remaining honey and vanilla extract until smooth and well combined, creating a sweetened creamy yogurt layer.
  3. Assemble Popsicles: Pour an equal amount of the raspberry chia mixture into each popsicle mold, then spoon in the vanilla yogurt over the raspberry layer. Sprinkle a small amount of granola on top of the yogurt for added crunch.
  4. Freeze Popsicles: Insert popsicle sticks into each mold and place the molds in the freezer. Freeze the popsicles until completely solid, typically about 4–6 hours or overnight for best results.
