Cream Cheese Mixture

Instructions

  1. Prepare the cream cheese mixture: In a small bowl, combine softened cream cheese, confectioner’s sugar, and almond extract. Stir the ingredients together until the mixture is well combined and smooth. Chill this mixture in the refrigerator for about 10 to 15 minutes to help it firm up slightly.
  2. Prepare the strawberries: While the cream cheese mixture chills, rinse the strawberries thoroughly and pat them dry using paper towels. Keep the strawberry leaves intact and slice each strawberry lengthwise in half. Arrange the strawberry halves cut side up on a plate or serving platter. If any halves do not sit flat, carefully trim a tiny slice from the rounded side to create a stable base.
  3. Pipe the cream cheese filling: Transfer the chilled cream cheese mixture into a piping bag fitted with a large star tip. If you don’t have a piping bag, you can use a zip-top plastic bag and cut off one corner to pipe. Carefully pipe the cream cheese mixture evenly onto each strawberry half.
  4. Top with blueberries and serve: Place two blueberries on top of the cream cheese layer on each strawberry half. Serve the cheesecake bites immediately or refrigerate for up to about 3 hours before serving to keep them fresh and chilled.
