  • 1 (16 oz) jar roasted red bell peppers, drained
  • 4 tablespoons tomato paste
  • 2 tablespoons extra virgin olive oil
  • 1-2 cloves garlic, finely minced
  • 2 tablespoons packed chopped fresh basil or 1 teaspoon dried basil
  • 1 teaspoon dried oregano or 1 ½ tablespoons fresh oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1/8 to 1/4 teaspoon red pepper flakes


Instructions

  1. Combine Ingredients: Add the drained roasted red bell peppers, tomato paste, extra virgin olive oil, minced garlic, fresh or dried basil, oregano, dried parsley, onion powder, dried thyme, salt, pepper, and red pepper flakes into a high-powered blender.
  2. Blend to Consistency: Blend all ingredients until smooth, scraping down the sides of the blender as needed to ensure even mixing. Blend to your desired texture, whether completely smooth or slightly chunky.
  3. Serve and Enjoy: Transfer the sauce to a serving dish and use immediately or refrigerate. Serve with sandwiches, wraps, burgers, Mediterranean grain bowls, pasta, roasted or raw vegetables, eggs, potatoes, or any dish needing a flavorful, smoky sauce.
