  • 2 large eggs (lightly beaten)

  • 1 cup frozen peas and carrots (thawed)
  • 3 cloves garlic (minced)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 green onions (sliced)
  • Salt and pepper (to taste)


Instructions

  1. Scramble the eggs: Heat 1 teaspoon of vegetable oil in a large skillet or wok over medium heat. Add the lightly beaten eggs and scramble until just set. Remove the eggs from the skillet and set aside for later.
  2. Sauté the vegetables: Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir in the finely chopped onion and thawed peas and carrots. Cook for 5 to 7 minutes until softened and fragrant, stirring frequently. Add minced garlic and cook for an additional minute, continuing to stir frequently to avoid burning.
  3. Add rice and chicken: Stir in the cooked rice and shredded rotisserie chicken into the skillet. Cook for 6 to 7 minutes, breaking up any clumps of rice with a spatula to ensure even heating and mixing.
  4. Season and combine: Add soy sauce, oyster sauce, and sesame oil to the rice mixture. Stir well to evenly coat all ingredients. Fold in the scrambled eggs and sliced green onions. Continue to cook over medium heat for 3 to 5 minutes until the entire mixture is heated through.
  5. Adjust seasoning and serve: Taste the fried rice and add salt and pepper as needed to enhance flavor. Serve hot for a comforting and quick meal.
