Description

A simple and convenient sheet pan eggs recipe that yields fluffy, cheesy baked eggs perfect for serving a crowd. This dish combines beaten eggs with half and half, cheese, and optional mix-ins, baked evenly on a rimmed sheet pan for an easy breakfast or brunch option.

Ingredients

Egg Mixture

  • 18 large eggs
  • 3/4 cup half and half
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Cheese and Mix-ins

  • 1 to 1 1/2 cups grated cheddar cheese (sharp or medium)
  • 2 to 3 cups optional mix-ins (such as diced bell peppers, cooked bacon, chopped spinach, or mushrooms; see notes)

Instructions

  1. Preheat Oven: Set your oven to 325 degrees Fahrenheit to prepare for baking the eggs evenly.
  2. Mix Eggs: Crack all 18 eggs into a large mixing bowl. Use a whisk to break the yolks and blend the eggs together thoroughly. Add the half and half, salt, and pepper, then whisk again until fully combined.
  3. Add Cheese and Mix-ins: Stir in the grated cheddar cheese and any optional mix-ins you choose. Alternatively, you can mix in just the eggs and pour them into the pan, then sprinkle the cheese over the top.
  4. Prepare Baking Sheet: Spray a rimmed 18 x 13 x 1-inch baking sheet generously with non-stick cooking spray to prevent sticking.
  5. Pour Egg Mixture: Pour the egg mixture evenly into the prepared baking sheet. It’s helpful to place the pan on the countertop near the oven to avoid spilling as you transfer it.
  6. Bake: Place the pan in the oven and bake until the eggs are just barely cooked through in the center, about 20 to 25 minutes.

Notes

  • You can customize the mix-ins to your preference; popular options include cooked bacon, sausage, diced vegetables like bell peppers, spinach, onions, or mushrooms.
  • Be sure to spray the baking sheet well to prevent sticking and facilitate easy serving.
  • The baking time may vary slightly depending on your oven; start checking at 20 minutes to avoid overcooking.
  • For a dairy-free version, substitute half and half with a suitable alternative and omit cheese or use dairy-free cheese.
