Ingredients

For the Glaze and Baking

  • 1 ½-2 Pounds Sea Bass (or cod or fish of choice)
  • 1 Pound Green Beans (washed & trimmed)
  • Olive Oil (for drizzling, about 1 tablespoon)

For the Sizzling Ginger Scallion Sauce

  • ⅓ Cup Avocado Oil
  • 2 Bunches Scallions, separated (whites and greens finely chopped in separate bowls)
  • 1 Tablespoon Freshly Grated Ginger
  • 4 Cloves Garlic (minced)
  • ¼ Cup Low Sodium Soy Sauce
  • 1 Lime (juiced)

To Serve

  • 2 Cups Cooked Brown Rice
  • Lime Wedges
  • Chili Crisp (optional, for garnish)


Instructions

  1. Preheat Oven: Preheat your oven to 425°F. Line a large baking sheet with parchment paper or grease it lightly with cooking spray, then set it aside.
  2. Prepare the Fish: Place the sea bass skin-side down on one end of the prepared baking sheet. In a small bowl, whisk together ¼ cup soy sauce, white miso paste, and honey until smooth and fully combined. Brush this glaze evenly over the top of the fish, saving some glaze for the green beans.
  3. Prepare Green Beans: Arrange the green beans on the other end of the baking sheet. Toss the beans with the reserved miso-honey glaze until evenly coated. Drizzle with a small amount of olive oil to help roasting.
  4. Bake: Place the baking sheet in the oven and bake for 12 to 15 minutes, until the fish is cooked through, flakes easily with a fork, and the green beans are tender.
  5. Make Sizzling Ginger Scallion Sauce: While the fish is baking, heat the avocado oil in a small saucepan over medium-high heat until tiny bubbles form around the edges, indicating it’s very hot. Meanwhile, combine the white parts of the scallions, grated ginger, and minced garlic in a heat-safe glass bowl or measuring cup.
  6. Sizzle Sauce: Carefully pour the hot oil over the scallion, ginger, and garlic mixture; it should sizzle instantly. Stir to combine, then add soy sauce and lime juice, followed by the green parts of the scallions. Stir well and set the sauce aside.
  7. Remove Fish from Oven: When done, take out the sea bass and green beans from the oven and allow them to rest for a moment.
  8. Assemble Bowls: Start with a base of warm cooked brown rice in serving bowls. Top with the baked sea bass and roasted green beans. Generously spoon the sizzling ginger scallion sauce over everything.
