Description

This Skillet BBQ Beef and Rice recipe is a quick and flavorful weeknight meal that combines savory ground beef simmered in tangy BBQ sauce with tender veggies and fluffy rice. Ready in just 30 minutes, it’s an easy one-pan dish perfect for busy evenings that brings comforting BBQ flavor to your dinner table without the need for grilling or oven cooking.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • ¾ cup sweet onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 green onions, sliced (for garnish, optional)

Liquids and Sauces

  • ¾ cup BBQ sauce
  • ¼ cup beef broth
  • 1 tbsp Worcestershire sauce

Other Ingredients

  • 2 cups cooked white rice (cold or day-old)
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Brown the Beef and Onion: Heat a large skillet over medium heat. Add the ground beef and chopped onion, cooking while breaking up the meat with a spoon until browned and fully cooked, about 6 to 8 minutes. Drain excess grease if necessary to avoid a greasy dish.
  2. Add Garlic: Stir in the minced garlic and cook for 1 minute until fragrant, enhancing the savory aroma of the dish.
  3. Simmer with Sauces: Pour in the BBQ sauce, beef broth, and Worcestershire sauce. Stir everything well to evenly coat the beef. Let the mixture simmer for 3 to 5 minutes to develop flavor and thicken slightly.
  4. Combine Rice and Veggies: Add the cooked white rice, frozen peas and carrots, salt, and pepper. Mix thoroughly to combine all ingredients evenly. Continue cooking for an additional 5 minutes, stirring occasionally, until the rice is heated through and the sauce is well distributed.
  5. Garnish and Serve: Remove from heat and top with sliced green onions for a fresh, mild onion flavor and a pop of color before serving.

Notes

  • Using day-old rice helps prevent the dish from becoming mushy, as cold rice holds its shape better when reheated.
  • You can substitute the BBQ sauce for a smoky or spicy variety to adjust the flavor profile to your liking.
  • For a lower sodium version, use low-sodium beef broth and reduce added salt.
  • Add other frozen vegetables like corn or bell peppers for extra color and nutrition.
  • This dish reheats well and can be stored in an airtight container in the refrigerator for up to 3 days.
