Instructions
- Combine Ingredients: In the bottom of your slow cooker, combine 8 ounces cream cheese, 1/4 cup sour cream, 1/4 cup mayonnaise, 1/2 cup shredded mozzarella cheese, 1/4 cup grated parmesan cheese, 2 teaspoons minced garlic, 1/2 teaspoon dried parsley, 12 ounces finely chopped marinated artichoke hearts, and 3 cups chopped spinach. Season the mixture with salt and pepper to taste, ensuring everything is well mixed.
- Cook the Dip: Cover the slow cooker with its lid and set it to low heat. Cook the mixture for 45 minutes to allow the flavors to blend and the ingredients to become creamy and hot throughout.
- Finish Cooking with Extra Cheese: After 45 minutes, stir in the remaining 1/2 cup shredded mozzarella cheese evenly into the dip. Continue cooking on low for an additional 15 to 20 minutes, or until the top is bubbly and the cheese is fully melted.
- Keep Warm and Serve: Once cooked, switch the slow cooker to the warm setting to keep the dip at serving temperature. Optionally, sprinkle chopped fresh parsley on top for garnish. Serve the dip warm alongside crostini, sliced bread, or tortilla chips.
