Featuring ice cream sandwiches layered with a fluffy marshmallow and whipped cream mixture, dusted with cocoa powder, and topped with graham crackers, mini marshmallows, and chocolate chunks, this treat is perfect for summer parties and family gatherings.
Ingredients
Ice Cream Sandwich Layer
- 24 ice cream sandwiches
Marshmallow Whipped Topping
- 16 ounces frozen whipped cream topping, thawed and divided
- 1 cup marshmallow fluff
- ¼ cup cocoa powder
Toppings
- ½ cup crushed graham crackers
- 1 cup mini marshmallows
- 2 full size Hershey’s bars, roughly chopped
Instructions
- Prepare Marshmallow Whipped Cream: In a large mixing bowl, combine the thawed whipped cream topping with the marshmallow fluff. Mix until smooth and evenly combined. Divide this mixture into two equal portions. To one half, add ¼ cup of cocoa powder and blend well until you achieve a chocolate whipped cream topping. Set this aside.
- Layer Ice Cream Sandwiches: Unwrap 12 ice cream sandwiches and line them neatly in a single layer at the bottom of a 9×13 inch pan. If necessary, slice one or two sandwiches to fit perfectly without overlapping.
- Add Chocolate Whipped Cream: Using a spatula, spread the chocolate whipped cream mixture evenly over the layer of ice cream sandwiches, covering all sandwiches fully.
- Second Ice Cream Layer: Repeat the process by arranging the remaining 12 ice cream sandwiches in a single layer on top of the chocolate whipped cream layer.
- Top with Plain Whipped Cream: Spread the plain marshmallow whipped cream mixture evenly over the second layer of ice cream sandwiches, creating a smooth surface.
- Add Toppings and Freeze: Sprinkle the crushed graham crackers, mini marshmallows, and chopped Hershey’s chocolate bars evenly over the top of the whipped cream. Cover the dish loosely with foil to protect from freezer odors, then place it in the freezer for 4 hours to fully set.
- Serve: After freezing, slice the cake into squares and serve chilled. Enjoy the rich, gooey s’mores flavors in every bite!
Notes
- For easier slicing, let the cake sit at room temperature for 5-10 minutes before cutting.
- You can customize the toppings by adding chopped nuts or using different types of chocolate bars.
- Store leftovers covered in the freezer to maintain freshness.
- To prevent marshmallows from browning or melting prematurely, add them just before serving.
