This delicious S’mores Pie combines the classic campfire flavors of graham crackers, chocolate, and toasted marshmallows into a rich, creamy pie that’s perfect for any occasion. The buttery graham cracker crust, layered with marshmallow creme and chocolate bars, bakes to a gooey, toasted perfection that’s sure to satisfy your sweet tooth.


Ingredients

Crust

  • 1/2 cup salted butter, softened
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs

Filling & Topping

  • 7 ounce container marshmallow creme
  • 4 Hershey chocolate bars (1.5 ounce each)
  • 1/2 cup mini marshmallows, plus a few more for the top
  • Optional: broken pieces of graham crackers for topping


Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch regular (not deep dish) pie pan to ensure the crust won’t stick.
  2. Mix the dough: In a large bowl, beat together the softened butter, light brown sugar, and granulated sugar until smooth and creamy. Add in the egg and vanilla extract, mixing just until combined. Next, stir in the all-purpose flour and graham cracker crumbs until a cohesive dough forms.
  3. Form the crust: Press two-thirds of the dough evenly into the bottom and up the sides of the prepared pie pan, creating a base for the filling.
  4. Add the filling layers: Carefully spread the marshmallow creme evenly over the crust. Break three chocolate bars into squares and place them on top of the marshmallow layer. Then sprinkle the 1/2 cup mini marshmallows evenly over the chocolate layer.
  5. Create the topping: Using the remaining dough, flatten small 2-inch disks and lightly press them over the top of the marshmallows to cover. It’s okay if some marshmallows peek through for a rustic look.
  6. Bake the pie: Bake the pie in the preheated oven for 13 minutes. Then remove from oven and top with a few more mini marshmallows and the remaining chocolate bar, broken into pieces. Optionally, sprinkle broken graham cracker pieces on top. Return the pie to the oven and bake for an additional 5-7 minutes, or until the marshmallows are toasted and golden. For extra toasting, broil for the final minute while watching carefully to avoid burning.
  7. Cool and serve: Allow the pie to cool for at least 30 minutes to set before slicing into 8 servings. Enjoy your gooey, toasted s’mores pie!
