- 15 ounces (425g) mini marshmallows, divided
- 5 tablespoons (70g) unsalted butter
- 1 teaspoon (15ml) vanilla extract
- 4 cups (680g) chocolate chips, divided
- 8 (approx) graham crackers (full sheets)
Instructions
- Prepare the Pan: Line a 9×13-inch pan with foil or parchment paper and spray it with nonstick cooking spray to prevent sticking.
- Measure the Cereal: Place 6 cups of Rice Krispies cereal into a large mixing bowl.
- Set Aside Marshmallows: Separate 10 ounces of mini marshmallows from the total 15 ounces and set aside for later layering.
- Melt Butter: In a large pot, melt 5 tablespoons of unsalted butter over medium-low heat, stirring occasionally to prevent burning.
- Add and Melt Marshmallows: Stir in the 10 ounces of mini marshmallows into the melted butter until fully melted and smooth. Remove from heat and stir in 1 teaspoon of vanilla extract.
- Combine Cereal and Marshmallow Mixture: Pour the melted marshmallow mixture over the cereal and stir quickly until all cereal is evenly coated.
- Press into Pan: Immediately transfer the coated cereal mixture into the prepared pan and press firmly to compact the mixture. To avoid sticking, spray wax paper with nonstick spray and use it to press down evenly.
- First Chocolate Layer: Melt 1 ½ cups of chocolate chips in a microwave-safe bowl by heating at 50% power for 1 minute, stirring, then continuing in 30-second increments until smooth. Spread this melted chocolate evenly over the pressed cereal treats.
- Add Graham Crackers and Second Chocolate Layer: Place full sheets of graham crackers in a single layer on top of the melted chocolate layer. Melt another 1 ½ cups of chocolate chips using the same method and spread this evenly over the graham crackers. Immediately top with the remaining mini marshmallows.
- Drizzle Final Chocolate Layer: Melt the remaining 1 cup of chocolate chips using the microwave method. Transfer the melted chocolate to a small Ziploc bag, cut off one corner, and drizzle the chocolate over the marshmallows for decoration and added flavor.
- Set and Slice: Allow the assembled treats to set until the chocolate is firm. Once set, slice into bars.
- Storage: Store bars in an airtight container at room temperature for up to 3 days. To freeze, allow them to cool completely, cut into bars, wrap each individually in wax paper, and place in an airtight container for up to 3 months.
